1 package vanilla flavor instant pudding and pie filling mix (6-serving size)
1 teaspoon pumpkin pie spice
1 cup Libby's canned pumpkin
2 ½ frozen non-dairy topping, thawed
9 inches Keebler graham cracker crust

Instructions

  • Preparation

    1. In a large bowl, vigorously whisk together the cold milk, vanilla flavor instant pudding mix, and pumpkin pie spice for 1 minute until the mixture thickens.
    2. Gently fold in the Libby's canned pumpkin until well combined.
    3. Add the thawed non-dairy topping and mix until smooth. Spread the mixture in the graham cracker crust.
    4. Refrigerate the pie for at least 2 hours, or until set. Serve garnished as desired.
    5. *Note: You can use a blend of 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, and 1/8 teaspoon ground cloves as a substitute for pumpkin pie spice.
