This classic rice pudding turns cooked white rice into a creamy stovetop dessert with milk, sugar, vanilla, and warm spices. It is simple enough for leftover rice and can be served warm after a short rest or chilled until set.

Ingredients

2
cups white rice, cooked
2
cups whole milk
13
cup granulated sugar
18
teaspoon kosher salt
1
tablespoon unsalted butter
12
teaspoon vanilla extract
14
teaspoon cinnamon, ground
18
teaspoon nutmeg, ground

Instructions

1. Combine the cooked rice, milk, sugar, and salt in a heavy-bottomed saucepan.
2. Set the pan over medium heat and bring the mixture to a gentle simmer, stirring often.
3. Reduce the heat to low and cook for 15 to 20 minutes, stirring frequently, until the rice is tender and the pudding is creamy and thickened.
4. Remove the pan from the heat and stir in the butter, vanilla, cinnamon, and nutmeg.
5. Let the pudding stand for 10 minutes before serving, or chill it if you prefer a firmer cold pudding.
