Classic Shrimp Ceviche

A refreshing and flavorful seafood dish that combines fresh shrimp with vibrant vegetables and zesty lime juice.

Ingredients

1 lb shrimp (shelled, de-veined)
2 avocados, cubed
1 tomato, diced
½ red onion, diced
½ bunch cilantro, coarsely chopped
2 limes
3 garlic cloves
2 tablespoons coarse sea salt
1 tablespoon olive oil

Instructions

1. Begin by rinsing the peeled and de-veined shrimp, then pat them dry.
2. In a pan, combine olive oil and garlic, and sauté over low heat until the aroma is fragrant, approximately 3 minutes.
3. Add the shrimp to the pan, season with salt and pepper, and sauté until the shrimp JUST start to turn pink, which should take no more than 2 to 3 minutes. Careful not to overcook the shrimp - if you're unsure, cook just a few at a time until you feel confident.
4. Once the shrimp are cooked, transfer them to a bowl and let them cool to room temperature, usually around 10-15 minutes. Chill the shrimp in the refrigerator, ensuring they cool completely before refrigerating to avoid a rubbery texture.
5. In a large mixing bowl, combine the diced tomatoes, onions, cubed avocados, coarsely chopped cilantro, fresh lime juice, and salt. Allow the flavors to meld at room temperature while the shrimp chill, which takes approximately 20 minutes.
6. Once the shrimp are properly chilled, roughly chop them into pieces similar in size to the avocado chunks and fold them into the vegetable mixture. Adjust seasoning with salt and pepper to taste. Serve with crispy tortilla chips and a refreshing margarita!
