These classic sugar cookies are buttery, lightly vanilla-scented cutout cookies with crisp edges and tender centers. The dough chills until firm, rolls cleanly, and works well with sanding sugar, icing, or simple frosting.

Instructions

1. Beat the softened butter and granulated sugar in a large bowl until pale and creamy, about 2 minutes.
2. Beat in the egg and vanilla extract until the mixture is smooth.
3. Whisk the flour, baking powder, and salt in a separate bowl.
4. Add the dry ingredients to the butter mixture on low speed and mix just until a soft dough forms.
5. Divide the dough in half, shape each half into a flat disk, wrap, and refrigerate until firm, at least 1 hour and up to overnight.
6. Heat the oven to 375°F and line baking sheets with parchment paper.
7. Roll one disk of chilled dough on a lightly floured surface to 1/4-inch thickness, keeping the second disk refrigerated.
8. Cut out cookies with floured cutters and arrange them 1 inch apart on the prepared baking sheets.
9. Sprinkle with sanding sugar before baking if you are not planning to ice the cookies.
10. Bake until the cookies look set and the edges are just beginning to turn light golden, 7 to 9 minutes.
11. Let the cookies cool on the baking sheet for 2 minutes, then transfer them to a wire rack to cool completely.
12. Decorate the cooled cookies with icing or frosting if desired.
