Ingredients

½ pound salted butter, melted and cooled
1-½ dark brown sugar
2 eggs
½ teaspoon vanilla
½ teaspoon ground cinnamon
1 pinch pinch of ground cardamom
½ teaspoon baking soda
½ teaspoon baking powder
2-½ all-purpose flour
½ cup icing sugar
2 teaspoons coconut milk
1 tablespoon unsweetened shredded coconut

Instructions

1. Begin by melting the salted butter and allowing it to cool.
2. In a bowl, cream together the cooled butter and dark brown sugar using a whisk. Gradually whisk in the eggs one at a time, followed by the vanilla and a hint of ground cinnamon and a pinch of ground cardamom. Add the baking soda, baking powder, and all-purpose flour. Mix until just combined – the dough should be wet and sticky.
3. With wet hands, scoop the cookie dough and shape it into balls about the size of a golf ball. Place the dough balls onto a parchment-lined baking sheet without pressing them down, to maintain their pillowy dome shape.
4. Bake in a preheated oven at 350°F for about 10 minutes, or until they turn a light golden brown. The cookies should appear slightly underbaked and very soft. Allow them to cool on a rack before applying the frosting.
5. While the cookies are cooling, prepare the frosting by combining icing sugar and unsweetened shredded coconut in a small bowl. Gradually mix in coconut milk, one teaspoon at a time, ensuring each addition is fully incorporated before adding more. The frosting should have a thick and spreadable consistency, perfect for application with a butter knife. Adjust the texture by adding a small amount of coconut milk or icing sugar as needed.
6. Spread the luscious coconut frosting over the cooled cookies and allow it to set before indulging in the delightful treat.
