Delightfully rich and creamy coconut fudge made with condensed milk and aromatic cardamom. A sweet treat perfect for any occasion.

Ingredients

1 can condensed milk 14 oz
2 tablespoons butter
1 cup milk
½ cup unsweetened coconut flakes
¼ teaspoon cardamom (optional)

Instructions

    1. In a pan over medium heat, toast the coconut until it turns light brown.
    2. Pour in 1/2 cup of milk and let it cook for about 30 seconds before turning off the heat.
    3. Transfer the condensed milk from a can into a microwave-safe bowl. It is recommended to use a large bowl to prevent overflowing, like a 2-quart measuring bowl. Add butter and 1/4 cup of milk, gently stirring to combine.
    4. Microwave the condensed milk mixture for 3 minutes, pausing if it bubbles over. Stir and continue to microwave, ensuring to use oven mitts for safety.
    5. After the initial microwaving, add the toasted coconut (and optional cardamom powder) to the condensed milk. Microwave the mixture for an additional 5 minutes, pausing and stirring if necessary to prevent spillage.
    6. By the 8-minute mark, the mixture should be thickened and starting to flake. Microwave for an additional minute before stirring. If the edges start browning, continue microwaving in short intervals to prevent burning.
    7. Transfer the fudge mixture onto parchment paper or a pan, shaping it into squares or balls.
    8. Notes: 1. Adjust the amount of milk added to coconut based on absorption. 2. Take caution to prevent the mixture from bubbling over during microwaving. 3. Ensure the mixture doesn't burn towards the end of cooking. 4. Stir the mixture intermittently for optimal texture.
