500 | grams chicken breast |

1 | bunch fresh coriander |
2 | green chilies |
1 | tablespoon chicken tikka masala powder |
2 | tablespoons ghee or oil |
1 | teaspoon Salt |
Instructions
1. | Begin by cutting the chicken breast into cube-sized pieces to prepare the chicken kebabs. Ensure to drain all excess water and pat dry the chicken pieces. |

2. | Next, in a blender, combine fresh coriander leaves with green chilies and salt to create a smooth paste. Add a little water if needed. Set aside 4 tbsp of this flavorful paste for the marinade. |
3. | Transfer the chicken pieces to a mixing bowl and incorporate yogurt. Ensure the yogurt is water-free by straining it in a strainer for approximately half an hour to remove excess moisture. |
4. | To the chicken mixture, add 4 tbsp of the coriander paste, chicken tikka masala powder, salt, lemon juice, and 1 tbsp of ghee or the oil of your choice. |
5. | Cover the bowl and refrigerate for an hour to allow the flavors to meld together during the marination process. |
6. | Preheat the oven to 190°C or 370°F. Skewer the marinated chicken cubes. If skewers are not available, prepare a baking tray by covering it with aluminum foil, greasing it, and arranging the chicken on it. Place the chicken in the preheated oven. |
7. | Cook the coriander chicken kebabs for 15-20 minutes, ensuring to brush them with ghee or oil intermittently. If using a tray, rotate the chicken pieces after 7-10 minutes for even cooking. |
