A delightful salsa filled with a variety of beans and fresh vegetables, this recipe is perfect for making ahead to allow the ingredients to blend and enhance in flavor.

Ingredients

5 small cucumber, with peel, raw
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can black-eyed peas, rinsed and drained
1 (15 ounce) can corn, rinsed and drained
1 (10 ounce) can diced tomatoes with green chile peppers
1 ½ cups Italian-style salad dressing
1 large tomato, seeded and diced
1 large red onion, diced
5 bell peppers, mini sweet peppers
5 medium green onions, chopped
¼ cup chopped cilantro, or to taste
1 pinch garlic powder, or to taste

Instructions

    1. In a large bowl, combine the cucumbers, black beans, black-eyed peas, corn, diced tomatoes, Italian-style dressing, tomatoes, red onions, sweet peppers, green onions, cilantro, and a pinch of garlic powder. Mix thoroughly until well combined.
    2. Refrigerate the salsa for 2 to 8 hours to allow the flavors to meld together. Stir well before serving.
