2 tablespoons butter, divided
1 medium onion, chopped
2 garlic cloves, crushed
2 cups fresh carrots, grated
1 lb broccoli, washed and cut
1/2 cup flour
1 quart half-and-half
1 quart chicken stock
salt and pepper, to taste
1/4 teaspoon nutmeg
8 ounces sharp cheddar cheese, grated

Instructions

    1. Begin by sautéing a medium onion in 2 tablespoons of butter until golden. Stir in crushed garlic and cook for an additional 3 minutes. Set aside.
    2. In a separate pan, melt 1/2 cup of butter and whisk in flour to create a roux. Cook over medium heat for 3-5 minutes, continuously stirring. Slowly pour in the half-and-half, followed by the chicken stock, whisking constantly. Allow the mixture to simmer for 20 minutes.
    3. Add in the freshly grated carrots, broccoli, and the previously sautéed onions. Let the vegetables cook over low heat until tender, about 20-25 minutes. Season with salt and pepper to taste.
    4. Carefully transfer the soup in batches to a blender and puree until smooth.
    5. Return the smooth soup to the pot and stir in the grated sharp cheddar cheese until fully melted and incorporated.
    6. Keep the soup on low heat and gently stir in the fragrant nutmeg for a final touch of flavor.
