Creamy Broccoli Cheddar Soup
A rich and hearty soup bursting with flavors of broccoli, cheddar cheese, and a touch of nutmeg.
Ingredients
2 | tablespoons butter, divided |

2 | garlic cloves, crushed |
2 | cups fresh carrots, grated |
1 | lb broccoli, washed and cut |
1/2 | cup flour |
1 | quart half-and-half |
1 | quart chicken stock |

1/4 | teaspoon nutmeg |
8 | ounces sharp cheddar cheese, grated |
Instructions
1. | Begin by sautéing a medium onion in 2 tablespoons of butter until golden. Stir in crushed garlic and cook for an additional 3 minutes. Set aside. |

2. | In a separate pan, melt 1/2 cup of butter and whisk in flour to create a roux. Cook over medium heat for 3-5 minutes, continuously stirring. Slowly pour in the half-and-half, followed by the chicken stock, whisking constantly. Allow the mixture to simmer for 20 minutes. |
3. | Add in the freshly grated carrots, broccoli, and the previously sautéed onions. Let the vegetables cook over low heat until tender, about 20-25 minutes. Season with salt and pepper to taste. |
4. | Carefully transfer the soup in batches to a blender and puree until smooth. |
5. | Return the smooth soup to the pot and stir in the grated sharp cheddar cheese until fully melted and incorporated. |
6. | Keep the soup on low heat and gently stir in the fragrant nutmeg for a final touch of flavor. |
