((28 ounce)) can crushed tomatoes (such as San Marzano®)

teaspoon Creole seasoning (such as Tony Chachere's®)

((16 ounce)) package penne pasta

pound uncooked medium shrimp, peeled and deveined

cup heavy whipping cream

bunch fresh thyme, chopped

bunch fresh oregano, chopped

Instructions

1. In a large pot over medium heat, melt butter. Add sliced andouille sausage and cook for 2 minutes. Incorporate finely chopped celery, onion, bell pepper, and garlic; sauté until tender, about 5 to 7 minutes. Add the chicken and cook until no longer pink inside and juices run clear, for an additional 5 to 7 minutes. Stir in crushed tomatoes, sweet paprika, Creole seasoning, and cayenne pepper. Bring to a simmer and cook for 10 minutes.
2. Pour chicken broth into the pot and bring back to a simmer. Add penne pasta and simmer for 8 minutes. Add the shrimp. Continue simmering, stirring constantly, until the pasta is al dente and shrimp are cooked through, approximately 7 minutes more.
3. Add the heavy whipping cream and then incorporate chopped thyme, oregano, and basil. Cook until just heated through, for about 3 to 5 minutes. Serve the dish topped with a sprinkle of green onions and grated Parmesan cheese.
