Creamy Chicken and Sweet Potato Casserole

Ingredients

1 | large onion, finely chopped |
1 | clove garlic, chopped |
2 | sweet potatoes, peeled and diced |
2 | carrots, diced |
4 | skinless, boneless chicken breast halves, diced |
2 | tablespoons all-purpose flour |
1 | cup dry white wine |
2 | chicken stock |
¼ | cup half-and-half or light cream |
Instructions
1. | Preheat the oven to 400 degrees F (200 degrees C). |

2. | Heat olive oil in a large skillet over medium heat. Add finely chopped onion and chopped garlic; sauté until just starting to turn golden. Incorporate diced sweet potatoes and carrots; sauté until lightly browned. |
3. | Push the vegetables to the side of the pan, creating a space in the center. Add diced chicken; sauté until seared on all sides. Sprinkle all-purpose flour over the mixture and stir to combine. Gradually pour in chicken stock, deglazing the pan. Add dry white wine. Transfer the mixture to a casserole dish and cover. |
4. | Bake in the preheated oven for 1 hour. Allow it to cool slightly before stirring in half-and-half or light cream to prevent curdling. |
