1 tablespoon olive oil
1 large onion, finely chopped
1 clove garlic, chopped
2 sweet potatoes, peeled and diced
2 carrots, diced
4 skinless, boneless chicken breast halves, diced
2 tablespoons all-purpose flour
1 cup dry white wine
2 chicken stock
¼ cup half-and-half or light cream

Instructions

    1. Preheat the oven to 400 degrees F (200 degrees C).
    2. Heat olive oil in a large skillet over medium heat. Add finely chopped onion and chopped garlic; sauté until just starting to turn golden. Incorporate diced sweet potatoes and carrots; sauté until lightly browned.
    3. Push the vegetables to the side of the pan, creating a space in the center. Add diced chicken; sauté until seared on all sides. Sprinkle all-purpose flour over the mixture and stir to combine. Gradually pour in chicken stock, deglazing the pan. Add dry white wine. Transfer the mixture to a casserole dish and cover.
    4. Bake in the preheated oven for 1 hour. Allow it to cool slightly before stirring in half-and-half or light cream to prevent curdling.
