Ingredients

Kosher salt and freshly ground pepper
1 pounds parsnips, trimmed, peeled and cut into equal-size chunks
12 oz pack Frozen and Shelled Edamame, thawed
1 quart homemade, or low-sodium chicken stock or broth, purchased
½ cup organic tahini, such as Once Again or Sadaf 100% pure sesame
½ cup extra-virgin olive oil, infused with 2 large garlic cloves, peeled and smashed, plus more for drizzling
½ teaspoon dry cumin seeds
1 large garlic clove large garlic clove, chopped
1 small small lemon, juiced
Smoked Paprika, for decorative sprinkle, optional

Instructions

  • For the Hummus

    1. Heat oil in a small sauté pan over medium-low heat. Add cumin seeds and smashed garlic, and sauté until soft and light golden brown, approximately 5 to 7 minutes. Strain the mixture into a measuring cup.
    2. In a pot, bring chicken stock or broth to a boil. Season with salt, then add the parsnips and edamame. Boil until the vegetables are tender, about 25 to 30 minutes. It is crucial to cook the parsnips and edamame until they are luxuriously soft for a smooth hummus texture.
    3. Drain the vegetables, reserving about 1 cup of the hot cooking liquid. Place the parsnips and edamame in a food processor along with tahini, cumin, garlic-infused olive oil, chopped garlic, lemon juice, and 1/4 cup of the hot cooking liquid.
    4. Blend the ingredients until the mixture is velvety smooth. Adjust the seasoning according to taste, considering the saltiness of the tahini.
    5. Serve the hummus at room temperature by mounding it into a shallow bowl, creating a small well in the center. Drizzle with olive oil and sprinkle with smoked paprika for an elegant touch.
    6. Pair the hummus with a platter of fresh vegetables or baked pita chips. For a different serving option, spread it on lightly toasted bread topped with olives and tomato slices. Remember to check the ingredients on the Tahini jar for purity.
