2 tablespoons butter
4 red bell peppers, chopped
4 garlic cloves, minced
1 onion, chopped
24 fluid ounces chicken broth or vegetable broth
12 cup heavy cream
18 teaspoon ground pepper

Instructions

  • Preparation of the Soup

    1. Melt the butter in a large saucepan over medium heat.
    2. Sauté the red bell peppers, onion, and garlic in the saucepan for 5 to 10 minutes.
    3. Add the broth, stirring well. Reduce heat to low and simmer for 30 minutes.
    4. Using a hand-held immersion blender or a standard blender, puree the soup until smooth.
    5. Strain the soup and return the liquid to the saucepan over medium-low heat. Stir in the heavy cream and ground black pepper, heating through for about 5 to 10 minutes.
