Preparation of the Soup
- Melt the butter in a large saucepan over medium heat.
- Sauté the red bell peppers, onion, and garlic in the saucepan for 5 to 10 minutes.
- Add the broth, stirring well. Reduce heat to low and simmer for 30 minutes.
- Using a hand-held immersion blender or a standard blender, puree the soup until smooth.
