Ingredients

For the Cake

¼ cup butter, softened
1 cup sugar
1 egg
1 cup flour
½ teaspoon salt
1 teaspoon cinnamon
½ teaspoon grated nutmeg
2 tablespoons hot water
1 teaspoon vanilla
3 peeled diced cooking apples (such as Granny Smith or Jonathan)
½ cup chopped pecans (optional)

For the Rum Butter Sauce

whipped cream (to garnish)
½ cup dark brown sugar, firmly packed
½ cup sugar
5 tablespoons butter, softened
½ cup heavy cream
1 tablespoon rum

Instructions

  • For the Cake

    1. Cream the butter, then gradually add sugar, beating well at medium speed with an electric mixer.
    2. Add the egg and beat until blended.
    3. Combine flour, salt, cinnamon, and nutmeg in a bowl, and mix well.
    4. Add the dry ingredients to the creamed mixture.
    5. Beat on low speed until smooth.
    6. Stir in the hot water and vanilla.
    7. Fold in the peeled diced apples and chopped pecans, then spoon the mixture into a greased and floured 9-inch pie pan.
