Decadent Apple Pie Cookies

Ingredients

2 | tablespoons water |
1 | tablespoon cornstarch |
4 | sheets pie crust pastries |
1 | teaspoon all-purpose flour |
3⁄4 | cup confectioners' sugar |
1 | teaspoon ground cinnamon |
1 | teaspoon vanilla extract |
1 1⁄2 | tablespoons milk |
Instructions
1. | Begin by preheating the oven to 350 degrees F (175 degrees C). |

2. | In a saucepan over medium heat, melt the butter. Add the diced apples and toss until fully coated with butter. Stir in brown sugar, white sugar, lemon juice, cinnamon, vanilla extract, salt, nutmeg, allspice, and cloves. Cook and stir until apples have softened and the sugars have melted, approximately 5 minutes. Bring the mixture to a boil. |
3. | In a bowl, combine water and cornstarch. Stir the cornstarch mixture into the apple mixture and continue to cook and stir until the mixture thickens, about 5 minutes. Remove from heat and allow to cool completely, around 20 minutes. |
4. | On a work surface, roll out one sheet of pie crust with a rolling pin. Cover the crust with half of the cooled apple mixture. Roll out a second sheet of pie crust and slice it into 1/2-inch wide strips with a sharp knife. Weave the pie crust strips together over the apple mixture to create a lattice top. |
5. | Prepare a round cookie cutter or drinking glass by flouring it. Use the cutter to create 12 round pies from the dough. Transfer the pies to a baking sheet. |
6. | Bake in the preheated oven until the crust is cooked through and golden brown, approximately 20 minutes. Allow the pies to cool on a wire rack for about 10 minutes. |
7. | Repeat the process with the remaining pie crusts and apple mixture, placing them on a second baking sheet. Bake in the oven until the crust is cooked through and golden brown, about 20 minutes. |
8. | To make the cinnamon glaze, combine confectioners' sugar and cinnamon in a mixing bowl. Add vanilla extract and slowly stir in milk until you reach your desired glaze consistency. Drizzle the glaze over the cooled pies. |
