Ingredients

1/2 cup butter or margarine, cut in 1/4 chunks
1 1/2 sugar
2 eggs
1 teaspoon vanilla
2 large bananas (very ripe)
1 teaspoon baking soda
3/4 cup plain yogurt or sour cream
1 teaspoon baking powder
2 cups flour
1 cup chocolate chips
3/4 cup chopped pecans (optional)

Instructions

    1. In a food processor, blend 1/2 cup of butter (or margarine), 1 1/2 cups of sugar, 2 eggs, and 1 teaspoon of vanilla for 2 minutes, ensuring to scrape down the bowl occasionally.
    2. While the processor is running, add chunks of very ripe bananas until blended smoothly. (Pro tip: It's recommended to mash the bananas beforehand for easier incorporation).
    3. Dissolve 1 teaspoon of baking soda in 3/4 cup of plain yogurt or sour cream. Let it stand for 1 to 2 minutes. The yogurt will expand, so use a 2-cup measuring cup for accuracy.
    4. Add the yogurt mixture to the batter and process for 3 seconds.
    5. Stir in 2 cups of flour and 1 teaspoon of baking powder just until the flour disappears with 4 quick on/off turns.
