Ingredients

For the Brown Rice Pudding

2 cups cooked brown rice (Basmati)
1 12 cups buttermilk
1 large egg
14 cup honey
14 cup unsweetened cocoa
1 (14 ounce) can sweet cherries, well drained and divided
chocolate shavings
whipped cream

Instructions

  • For the Brown Rice Pudding

    1. Preheat the oven to 350°F (180°C).
    2. In a mixing bowl, whisk together buttermilk, egg, honey, and unsweetened cocoa until smooth.
    3. Add the cooked brown rice to the mixture and mix well.
    4. Roughly chop half of the sweet cherries and fold them into the rice mixture.
    5. Set aside the remaining cherries for garnish.
    6. Grease an 8x8 inch baking dish with butter and pour the rice mixture into it.
    7. Place the baking dish into a roasting pan or larger baking dish. Pour boiling water into the outer pan until it reaches halfway up the side of the dish with the rice pudding.
    8. Place the setup in the middle oven rack and bake at 350°F (180°C) for about 30 minutes, or until the center of the pudding is set to your desired consistency.
    9. Remove the dish from the oven and roaster. Allow it to cool on a rack.
    10. Once cooled, spoon the pudding into 4 to 6 dessert cups. Top with whipped cream, whole cherries, and chocolate shavings.
    11. For an elegant presentation, consider placing a couple of whole cherries and some chocolate shavings at the bottom of each dessert cup. Serve in wine glasses or regular glassware for a sophisticated touch.
