Decadent Chocolate-Mashed Potato Cake with Ganache

4 | bittersweet chocolate |
1⁄3 | cup half and half |
Instructions
1. | Begin by preheating the oven to 350°F. Grease and flour a large bundt or tube pan, setting it aside for later use. Peel the baking potato and cut it into large cubes. Boil the potato cubes in a saucepot until tender. Drain and mash the potatoes until smooth. Measure out 3/4 cup for the recipe, and season and enjoy the remaining potatoes while warm. |

2. | In a large mixing bowl or the bowl of a stand mixer, combine the sugar, cake flour, and baking soda on low speed for about 1 minute. Add the mashed potatoes, softened butter, melted chocolate, and vanilla extract. Mix on low speed until combined, then increase the speed to medium and beat until fluffy for 2 to 3 minutes. |
3. | Whisk together the eggs and buttermilk. Gradually add this mixture to the batter, scraping the bowl well to ensure thorough mixing. Pour the batter into a pan and bake for about an hour, or until a toothpick inserted comes out clean. Let the cake cool in the pan for 20 minutes before transferring it to a rack to cool completely. |
4. | For the ganache, combine bittersweet chocolate and half and half in a small sauté pan over low heat. Stir constantly to melt the chocolate, avoiding boiling or simmering.
