Instructions

1. In a medium bowl, stir together the chopped bittersweet chocolate, instant coffee, and a pinch of salt.
2. In a saucepan over medium heat, heat the heavy cream, white sugar, and vanilla extract, stirring constantly until the mixture just begins to simmer.
3. Pour the hot cream mixture over the chocolate mixture and let it sit for 1 minute.
4. Whisk the chocolate and cream mixture for 1 to 2 minutes, or until well combined.
5. Divide the mixture into four small espresso cups, tapping each cup to remove any air bubbles. Chill the pots de crème thoroughly in the refrigerator for a minimum of 4 hours.
6. When ready to serve, you can top the pots de crème with grated chocolate or add a dollop of lightly whipped cream and a sprinkle of cocoa powder.
