Ingredients

3 (12 ounce) bags semisweet chocolate chips
1 (11.5 ounce) package milk chocolate chips
3 teaspoons coffee
8 egg yolks
8 cups heavy whipping cream
1 cup white sugar
16 egg whites
1 pinch salt

Instructions

    1. In a heavy saucepan over very low heat, melt semisweet chocolate chips and milk chocolate chips while stirring continuously. Stir in the coffee, then remove from heat and allow the mixture to cool to room temperature.
    2. Add the egg yolks one at a time into the chocolate mixture, beating well after each addition.
    3. Using an electric hand mixer, beat the heavy cream in a large mixing bowl until it thickens. Gradually incorporate the sugar into the cream until the mixture forms stiff peaks.
    4. In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the cream mixture. Take about one-third of this mixture and fold it into the chocolate mixture. Then, gently fold in the remaining cream-and-egg mixture. Pour the mousse into a serving bowl or individual dessert cups.
    5. Refrigerate the mousse until set, approximately 2 hours.
