2 tablespoons melted butter
1 cup self-raising flour
¾ cup sugar
2 tablespoons cocoa
½ teaspoon salt
½ cup milk
1 teaspoon vanilla essence
½ cup brown sugar
1 tablespoon cocoa
2 tablespoons desiccated coconut
1 ½ boiling water
1 baking paper

Instructions

1. In a mixing bowl, combine the self-raising flour, cocoa, salt, and sugar. Stir in the milk, melted butter, and vanilla essence.
2. Carefully spoon the batter into a microwave ring mold or a microwave-proof casserole dish. Sprinkle the top with a mixture of brown sugar, cocoa, and desiccated coconut.
3. Gently pour the boiling water over the top. Cover the dish with a sheet of baking paper.
4. Microwave on HIGH for 6 minutes.
5. Allow the pudding to cool for 4-5 minutes before serving.
