Decadent Chocolate Truffle Cookies

2 | cups bittersweet chocolate chips (or chopped bittersweet chocolate), divided into 1 ½ cups and ½ cup |

¼ | cup all-purpose flour |
¼ | teaspoon baking powder |
¼ | teaspoon salt |
½ | teaspoon espresso powder (optional, for enhanced chocolate flavor) |
3 | tablespoons flaky sea salt |
Instructions
1. | In a double boiler, melt together 1 1/2 cups of bittersweet chocolate with 2 tablespoons of unsalted butter. Set aside. |

2. | In a mixing bowl, beat 2 eggs and 1/2 cup of sugar until pale and fluffy, for approximately 2 minutes. Slowly incorporate the warm chocolate mixture into the eggs, beating continuously. |
3. | Stir in 1 teaspoon of vanilla extract into the egg and chocolate mixture until well combined. |
4. | Add 1/4 cup of all-purpose flour, 1/4 teaspoon of baking powder, 1/4 teaspoon of salt, and 1/2 teaspoon of espresso powder (if using) to the mixture and mix thoroughly. |
5. | Fold in the remaining 1/2 cup of bittersweet chocolate into the warm batter (ensure the batter is not too hot to prevent melting the additional chocolate). Mix until evenly distributed. |
6. | Chill the cookie batter for 10-15 minutes while preheating the oven to 350°F. |
7. | Using a spoon or scoop, portion heaping tablespoonfuls of the batter onto parchment-lined baking sheets. Sprinkle generously with 3 tablespoons of flaky sea salt, then bake for 7-8 minutes. Remove the cookies promptly when they begin to look dry on top and develop cracks. Do not overbake, as they should still appear slightly soft. |
