1/2 | cup butter or 1/2 cup of margarine, softened |
1/3 | cup powdered sugar |
2 | teaspoons vanilla |
1 3/4 | cups flour, divided |
1/3 | cup pecans, chopped |
1 | (8 ounce) package cream cheese, softened |
2 | granulated sugar |
3 | eggs |
1/2 | cup lemon juice |
1 | tablespoon lemon peel, grated |
1 | tablespoon powdered sugar |
Instructions
For preparing the bars | |

1. | Preheat the oven to 350°F (175°C). |
2. | Line a 13x9 inch baking pan with foil and spray with cooking spray. |
3. | In a large bowl, mix together the softened butter, powdered sugar, and vanilla. Gradually stir in 1 1/2 cups of flour and the chopped pecans. Press the dough firmly onto the bottom of the prepared pan. Bake for 15 minutes. |
4. | In a medium bowl, beat the softened cream cheese and granulated sugar with an electric mixer on high speed until well blended. Add the remaining 1/4 cup of flour and eggs; beat until blended. |
5. | Stir in the lemon juice and grated lemon peel. Pour this mixture over the baked crust in the pan. Bake for an additional 30 minutes or until set. Remove from the oven and allow to cool completely. Sprinkle with 1 tablespoon of powdered sugar and then cut into 32 bars. |
