Decadent Dark Chocolate Madeleines

1 | large egg, separated, at room temperature |
1 | tablespoon milk, at room temperature |
2 | teaspoons vanilla |
Instructions

- Preheat the oven to 375 degrees F and position the rack in the center.
- Prepare a madeleine mold pan by generously buttering the twelve 3-by-2-inch indentations. Lightly dust with sifted flour, then remove excess flour.
- Melt the bittersweet chocolate in a double boiler over hot water, stirring until smooth. Set aside to cool for 5 to 10 minutes.
- In a small bowl, combine sifted flour, double-acting baking powder, and a pinch of salt.
- In a medium bowl, use a hand-held electric mixer on medium-high speed to cream softened unsalted butter and superfine sugar until creamy.
- Add the separated egg yolk and continue mixing until light, about 20-30 seconds.
- Beat in the melted chocolate.
- Reduce the mixer speed to low and blend in room temperature milk and vanilla.
- Mix in the flour mixture until smooth.
- In another medium bowl, beat the egg white with a hand-held electric mixer on low speed until frothy. Increase speed to medium-high and beat until stiff, shiny peaks form. Fold the egg white into the chocolate mixture until evenly combined.
- Divide the batter among the prepared molds, smoothing the tops to be level.
- Bake for 12 to 15 minutes until the madeleines spring back when gently pressed. Avoid overbaking to maintain their moist, fudgy texture.
- Cool the madeleines in the pan on a wire rack for 10 minutes.
- Unmold the madeleines by inverting the pan onto a work surface and gently tapping.
- Serve the madeleines warm or allow them to cool completely and store in an airtight container.
