2 ounces dark chocolate, melted and cooled slightly
1 12 cups all-purpose unbleached flour (I use King Arthur)
12 cup unsalted butter, room temperature
12 cup granulated sugar
14 cup light brown sugar
2 teaspoons vanilla extract
2 large egg yolks
12 teaspoon sea salt
14 teaspoon baking soda
1 cup turbinado, or course sugar

    1. Preheat the oven to 375 degrees F (190 degrees C) and line 2 large sheet pans with parchment paper.
    2. In a mixing bowl, cream together room temperature unsalted butter, granulated sugar, and light brown sugar for 1 minute. Scrape down the sides of the bowl. Continue beating for another minute and scrape the bowl again.
    3. Add vanilla extract and beat for 1 minute. Scrape the sides of the bowl.
    4. Mix in large egg yolks and beat for 1 minute. Scrape the sides of the bowl.
    5. Add all-purpose unbleached flour, sea salt, and baking soda. Beat for 1 minute. Scrape the sides of the bowl and beat for an additional minute.
    6. Create a well in the center of the dough and pour in the melted dark chocolate. Gently fold the dough with a spatula or knife to achieve a marbled look. Avoid overmixing.
    7. Place turbinado or coarse sugar in a small, shallow bowl. Using a small cookie or ice cream scoop, dipped in hot tap water, form balls of dough and coat them in the sugar. Place the dough balls on the parchment-lined pans with space in between.
    8. Avoid flattening the dough balls. This will help maintain a chewy texture.
    9. Bake for 8 - 10 minutes, rotating and switching the pans halfway through baking. Do not overbake to keep the cookies chewy.
    10. Cool the cookies on racks and store in airtight containers once cooled.
