100 grams chocolate graham crackers
50 grams unsalted butter, melted
300 grams cream cheese, softened
250 grams heavy cream
50 grams plain yogurt
100 grams sugar
1 tablespoon lemon juice
10 grams powdered gelatine + 2 tbsp water

Preparation

1. Crush the chocolate graham crackers in a resealable plastic bag using a rolling pin until fine crumbles are formed. Transfer the crumbles to a bowl and mix in the melted unsalted butter. Press the crumble mixture into the bottom of a pan and refrigerate while preparing the filling.
2. In a small bowl, combine the powdered gelatine with water and let it sit until the gelatine is fully absorbed, typically 5-10 minutes.
3. In a small saucepan, heat 100g of heavy cream until simmering over medium heat. Add the gelatine mixture and stir until the gelatine is completely dissolved. Set the mixture aside.
4. In a medium bowl, beat the softened cream cheese and sugar until smooth. Add the plain yogurt, lemon juice, and the remaining heavy cream. Beat until well combined. Then, incorporate the gelatine and heavy cream mixture and beat until fully combined.
5. Pour the creamy filling onto the chilled crust. Use a spatula to smooth the top, then refrigerate until the cheesecake is firm.
6. Optional: Enhance the presentation by decorating with whipped cream and/or frozen berries before serving.
