Decadent Oatmeal Carmelitas

Indulge in these chewy and gooey caramel bars packed with nuts and chocolate. Known as Goober Cookies, this delightful treat is even better the day after.

Ingredients

1 cup all-purpose flour
½ teaspoon baking soda
1 cup quick cooking oats
¾ cup packed brown sugar
¾ cup melted butter
¼ teaspoon salt
6 semisweet chocolate chips
½ cup chopped walnuts
¾ cup caramel ice cream topping
3 tablespoons all-purpose flour

Instructions

1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x9 inch square pan.
2. In a bowl, combine the all-purpose flour, baking soda, quick cooking oats, packed brown sugar, melted butter, and salt. Mix until well combined; the mixture will have a crumbly texture. Press half of the mixture onto the bottom of the prepared pan.
3. Bake at 350 degrees F (175 degrees C) for 10 minutes.
4. Allow the crust to cool slightly, then sprinkle over it the semisweet chocolate chips and chopped walnuts. Mix the caramel ice cream topping with the all-purpose flour and drizzle it over the chocolate chips. Top with the remaining oatmeal mixture, breaking it into small pieces to cover the top.
5. Bake at 350 degrees F (175 degrees C) for an additional 15 minutes. Let the bars cool before cutting into squares.
