Indulge in these chewy and gooey caramel bars packed with nuts and chocolate. Known as Goober Cookies, this delightful treat is even better the day after.
1 | cup all-purpose flour |

1⁄2 | teaspoon baking soda |
1 | cup quick cooking oats |
3⁄4 | cup packed brown sugar |
3⁄4 | cup melted butter |
1⁄4 | teaspoon salt |
6 | semisweet chocolate chips |
1⁄2 | cup chopped walnuts |
3⁄4 | cup caramel ice cream topping |
3 | tablespoons all-purpose flour |
1. | Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x9 inch square pan. |

2. | In a bowl, combine the all-purpose flour, baking soda, quick cooking oats, packed brown sugar, melted butter, and salt. Mix until well combined; the mixture will have a crumbly texture. Press half of the mixture onto the bottom of the prepared pan. |
3. | Bake at 350 degrees F (175 degrees C) for 10 minutes. |
4. | Allow the crust to cool slightly, then sprinkle over it the semisweet chocolate chips and chopped walnuts. Mix the caramel ice cream topping with the all-purpose flour and drizzle it over the chocolate chips. Top with the remaining oatmeal mixture, breaking it into small pieces to cover the top. |
5. | Bake at 350 degrees F (175 degrees C) for an additional 15 minutes. Let the bars cool before cutting into squares. |
