Ingredients

For Cake and Frosting

1 package of white baking chocolate
12 cup cup of butter
1 box box of layer white cake mix
1 cup cup of milk
3 eggs
1 tablespoon tablespoon of raspberry extract

For Assembly and Garnish

18 teaspoon teaspoon of red food coloring
1 cup cup of raspberries

For White Chocolate Cream Cheese Frosting

1 package package of cream cheese, softened
14 cup cup of butter, softened
1 package package of white baking chocolate, melted and cooled slightly
2 teaspoons teaspoons of raspberry extract
2 cups cups of confectioners' sugar

Instructions

  • For Preparing the Cake

    1. Begin by microwaving the white baking chocolate and butter in a medium microwaveable bowl on HIGH for 2 minutes or until the butter is melted.
    2. Stir the mixture until the chocolate is completely melted.
    3. Allow the mixture to cool slightly.
    4. In a large bowl, beat together the white cake mix, milk, eggs, raspberry extract, and the chocolate mixture with an electric mixer on low speed just until moistened, remembering to scrape the sides of the bowl frequently.
    5. Increase the mixer speed to medium and beat for 2 minutes or until the batter is well blended.
    6. Evenly pour the batter into two greased and floured 9-inch round cake pans.
    7. Bake the cakes in a preheated 350°F oven for 25 to 28 minutes or until a toothpick inserted in the centers comes out clean.
    8. Allow the cakes to cool in the pans for 10 minutes before removing them.
    9. Transfer the cakes to wire racks to cool completely.
  • For Frosting and Assembly

    1. Prepare the White Chocolate Cream Cheese Frosting.
    2. Stir the food color into 2/3 cup of the frosting until well blended.
    3. To assemble the cake, place one cake layer on a serving plate and spread it with the tinted frosting.
    4. Top with the remaining cake layer and frost the top and sides of the cake with the remaining frosting.
    5. Just before serving, adorn the cake with fresh raspberries.
    6. Store the cake in the refrigerator.
