Preparation
- Preheat the oven to 320°F (160°C).
- Grease and flour a 9-inch springform pan.
- For the crust, in a large bowl, combine the flour, sugar, baking powder, egg, milk, and optional grappa.
- Gently incorporate the cold butter slices into the mixture until just combined.
- Press half of the crust mixture gently into the bottom of the pan.
- In a medium bowl, mix the fresh ricotta and sugar until well combined.
- Fold in the unsweetened chocolate chips.
- Evenly spread the ricotta filling over the crust in the pan.
- Crumble the remaining crust mixture over the ricotta filling.
- As the cake bakes, the butter will melt to create a beautiful crust.
- Bake for 50 to 60 minutes until golden and set.
