1. Preheat the oven to 320°F (160°C).
2. Grease and flour a 9-inch springform pan.
3. For the crust, in a large bowl, combine the flour, sugar, baking powder, egg, milk, and optional grappa.
4. Gently incorporate the cold butter slices into the mixture until just combined.
5. Press half of the crust mixture gently into the bottom of the pan.
6. In a medium bowl, mix the fresh ricotta and sugar until well combined.
7. Fold in the unsweetened chocolate chips.
8. Evenly spread the ricotta filling over the crust in the pan.
9. Crumble the remaining crust mixture over the ricotta filling.
10. As the cake bakes, the butter will melt to create a beautiful crust.
