Preparation
- Preheat the oven to 325°F (160°C).
- In a medium mixing bowl, combine the all-purpose flour and packed brown sugar.
- Using a pastry blender, cut in the butter until the mixture resembles fine crumbs and starts to cling together.
- Stir in the finely chopped toasted almonds and slightly crushed toffee pieces. Form the mixture into a ball and gently knead until smooth.
- On a lightly floured surface, roll the dough to a thickness of 1/4 inch.
- Using a 1-1/4 to 1-1/2-inch scalloped or round cutter, cut the dough into rounds. Reroll the dough as needed.
- Place the rounds 1 inch apart on an ungreased cookie sheet.
- Sprinkle the tops of the rounds with coarse sugar.
- Bake in the preheated oven for 10 to 12 minutes or until the bottoms just start to brown and the edges are firm.
- Transfer the baked cookies to a wire rack and allow them to cool completely.
