Instructions
-
For the wacky chocolate cake
- Preheat the oven to 350°F (175°C).
- Lightly coat a square cake pan (9x9 inches) with nonstick cooking spray.
- In a mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.
- In a large measuring cup, combine the warm water, vanilla extract, canola oil, and white vinegar, whisking until thoroughly mixed.
- Add the wet ingredients to the dry ingredients and mix the batter until well blended.
- Use a spatula to scrape down the sides of the bowl, if needed.
- Pour the batter into the prepared cake pan, place it in the oven, and bake for approximately 25-30 minutes, or until a toothpick inserted comes out clean.
- Allow the cake to cool completely on a rack.
-
For the chocolate glaze
- In a small saucepan, bring the sugar, margarine, soymilk, and cocoa powder to a boil.
- Stir the mixture frequently, then reduce the heat to a simmer for 2 minutes, stirring constantly.
- Remove the saucepan from the heat and continue stirring for an additional 5 minutes.
- Add the vanilla extract and almond extract (if using), stir well, and immediately pour the glaze over the cake.
- The glaze will set quickly, so if it doesn't cover the entire cake, spread it to the edges swiftly before it hardens.
- For an optional finishing touch, top the cake with sprinkles and let it cool for an hour before serving.
