1 cup sugar
1.33 cup unsweetened cocoa powder
1 teaspoon baking soda
12 teaspoon salt
1 cup warm water
1 teaspoon vanilla extract
12 teaspoon chocolate extract (optional)
13 cup canola oil
1 teaspoon white vinegar or apple cider vinegar

For the chocolate glaze

12 cup sugar
4 tablespoons margarine (use Earth Balance vegan margarine)
2 tablespoons soymilk or almond milk (unsweetened)
2 tablespoons unsweetened cocoa powder
2 teaspoons vanilla extract
12 teaspoon almond extract (optional)

Instructions

For the wacky chocolate cake

1. Preheat the oven to 350°F (175°C).
2. Lightly coat a square cake pan (9x9 inches) with nonstick cooking spray.
3. In a mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.
4. In a large measuring cup, combine the warm water, vanilla extract, canola oil, and white vinegar, whisking until thoroughly mixed.
5. Add the wet ingredients to the dry ingredients and mix the batter until well blended.
6. Use a spatula to scrape down the sides of the bowl, if needed.
7. Pour the batter into the prepared cake pan, place it in the oven, and bake for approximately 25-30 minutes, or until a toothpick inserted comes out clean.
8. Allow the cake to cool completely on a rack.

For the chocolate glaze

1. In a small saucepan, bring the sugar, margarine, soymilk, and cocoa powder to a boil.
2. Stir the mixture frequently, then reduce the heat to a simmer for 2 minutes, stirring constantly.
3. Remove the saucepan from the heat and continue stirring for an additional 5 minutes.
4. Add the vanilla extract and almond extract (if using), stir well, and immediately pour the glaze over the cake.
5. The glaze will set quickly, so if it doesn't cover the entire cake, spread it to the edges swiftly before it hardens.
6. For an optional finishing touch, top the cake with sprinkles and let it cool for an hour before serving.
