Instructions

Preparation

1. Fill a large stockpot with about an inch of water and bring it to a boil. Cut the delicata squash into large wedges, remove the seeds, and place them in a steamer basket. Steam for 8-12 minutes until very tender. Allow the squash to cool, then remove the flesh from the skin and mash it in a small bowl.
2. In a separate pot, boil water for pasta.
3. In a medium frying pan, melt the butter over low heat. Add minced garlic and cook until golden, about 8 minutes. Stir in cayenne pepper, nutmeg, and salt.
4. Add milk, cream, and mashed squash to the pan. Stir well and bring the sauce to a simmer over medium heat. Let it reduce for about 7 minutes. Cook the pasta in the boiling water during this time.
5. Once the sauce has reduced and the pasta is cooked, reserve 1/2 cup of pasta water, drain the pasta, and add it to the sauce. If needed, add reserved water. Season with pepper, salt, or nutmeg to taste. Serve in a bowl, toss with grated Parmesan, and enjoy.
