1 | clove garlic, minced |
1 | pinch cayenne pepper |
1 3⁄4 | teaspoon nutmeg |

1⁄2 | cup low-fat or whole milk |
1 1⁄2 | tablespoons heavy cream |
2-3 | ounces whole wheat gobbetti pasta |
1 | tablespoon grated Parmesan |

1. | Fill a large stockpot with about an inch of water and bring it to a boil. Cut the delicata squash into large wedges, remove the seeds, and place them in a steamer basket. Steam for 8-12 minutes until very tender. Allow the squash to cool, then remove the flesh from the skin and mash it in a small bowl. |
2. | In a separate pot, boil water for pasta. |
3. | In a medium frying pan, melt the butter over low heat. Add minced garlic and cook until golden, about 8 minutes. Stir in cayenne pepper, nutmeg, and salt. |
4. | Add milk, cream, and mashed squash to the pan. Stir well and bring the sauce to a simmer over medium heat. Let it reduce for about 7 minutes. Cook the pasta in the boiling water during this time. |
5. | Once the sauce has reduced and the pasta is cooked, reserve 1/2 cup of pasta water, drain the pasta, and add it to the sauce. If needed, add reserved water. Season with pepper, salt, or nutmeg to taste. Serve in a bowl, toss with grated Parmesan, and enjoy. |
