This casserole commits fully: russet potatoes tossed with butter, chili powder and ranch dressing, layered with Colby-Monterey Jack, and baked until the top browns and the edges crisp. The ranch does the seasoning work from the inside; the cheese handles the ceiling. Twelve servings in under 90 minutes — built for cookouts, potlucks and second helpings.

Ingredients

4
russet potatoes, cut into ¼ inch cubes
2
teaspoons chili powder
1
teaspoon salt
12
teaspoon ground black pepper
6
tablespoons butter, cubed
1
package (8 ounce) shredded colby-monterey jack cheese
8
ounces (8 ounce) bottle ranch dressing

Instructions

1. Preheat the oven to 400 degrees F (200 degrees C) and lightly grease a 9x13 inch baking dish.
2. Arrange the russet potatoes in the baking dish and generously season them with chili powder, salt, and ground black pepper. Distribute the cubed butter evenly over the potatoes.
3. Cover the dish with aluminum foil and bake for 1 hour in the preheated oven, or until the potatoes are tender. Remove from the oven and gently mix in the shredded colby-monterey jack cheese and ranch dressing. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
