2 | cups sifted self-rising flour |
1⁄4 | cup milk |
1⁄2 | cup chopped pecans |
1 | teaspoon grated orange rind |
Instructions
For the Bread | |

1. | Cream the butter in a bowl until smooth. Add the packed brown sugar, mixing until well blended. |
2. | Beat in the eggs, one at a time. |
3. | Blend in the mashed sweet potatoes, nutmeg, and allspice, mixing well. |
4. | Add the sifted self-rising flour alternately with milk, mixing until smooth. Fold in the chopped pecans and grated orange rind. |
5. | Transfer the batter to a greased 8 1/2 x 4 1/2 x 2 5/8 inch loaf pan. |
6. | Bake in a preheated 350-degree oven for 45 to 50 minutes, or until the loaf springs back to the touch and starts to leave the sides of the pan. |
7. | Allow the bread to cool in the pan on a rack for 10 minutes. Shake the loaf loose and turn it out onto a rack to cool completely before wrapping it in foil to store. |
8. | Slice and serve the bread plain or with butter or softened cream cheese. |
