For the Bread

¼ cup butter
½ cup packed brown sugar
2 eggs
1 cup mashed cooked sweet potato
¼ teaspoon nutmeg
¼ teaspoon allspice
2 cups sifted self-rising flour
¼ cup milk
½ cup chopped pecans
1 teaspoon grated orange rind

Instructions

  • For the Bread

    1. Cream the butter in a bowl until smooth. Add the packed brown sugar, mixing until well blended.
    2. Beat in the eggs, one at a time.
    3. Blend in the mashed sweet potatoes, nutmeg, and allspice, mixing well.
    4. Add the sifted self-rising flour alternately with milk, mixing until smooth. Fold in the chopped pecans and grated orange rind.
    5. Transfer the batter to a greased 8 1/2 x 4 1/2 x 2 5/8 inch loaf pan.
    6. Bake in a preheated 350-degree oven for 45 to 50 minutes, or until the loaf springs back to the touch and starts to leave the sides of the pan.
    7. Allow the bread to cool in the pan on a rack for 10 minutes. Shake the loaf loose and turn it out onto a rack to cool completely before wrapping it in foil to store.
    8. Slice and serve the bread plain or with butter or softened cream cheese.
