2 lbs lean ground beef (or use ground turkey)
1 green pepper, chopped
1 small onion, chopped
1 teaspoon garlic powder
2 tablespoons chili powder
1 (10 ½ ounce) can mushroom soup
12 cup water (to dilute the soup)
1 (8 ounce) can red enchilada sauce
12 flour tortillas (warmed to soften)
2 cups cheddar cheese, grated

Instructions

  • For the Enchilada Casserole

    1. Begin by combining the lean ground beef (or ground turkey), chopped onion, green pepper, garlic powder, and chili powder in a pan. Cook until the meat is browned and drain any excess fat.
    2. In a separate bowl, mix the mushroom soup with the red enchilada sauce and water until well blended. Add this mixture to the cooked meat and simmer for about 10 minutes. Set aside.
    3. Grease a 9x13" baking pan. Create the first layer by placing six warmed flour tortillas at the bottom, followed by half of the meat mixture with sauce and half of the grated cheddar cheese.
    4. Repeat the layering process with the remaining ingredients. Allow the casserole to cool completely, then cover it with foil and refrigerate for 24 hours.
    5. When ready to bake, preheat the oven to 350°F. Cover the casserole with foil and bake for 45 minutes, or until heated through.
    6. Serve the enchilada casserole with a side of shredded lettuce, chopped tomatoes, sour cream, salsa, and guacamole for a delicious meal experience.
    7. For a variation, you can fill each flour tortilla with the ground meat, roll it up, then cover with the enchilada sauce and soup mixture, and top with grated cheese. Refrigerate the rolled enchiladas and heat before serving.
