The best argument for making meatloaf is what happens the next day. This is the sandwich Diane Sawyer made famous: thick slices of cold meatloaf seared in butter until the edges crisp, layered on toasted bread with a quick pan-sauce of mayonnaise, Dijon, ketchup and two steak sauces — Heinz 57 and A.1. — that does the work of a day-long glaze in about a minute. Fifteen minutes, eight sandwiches, and a reason to double your next meatloaf on purpose.

8 | tablespoons sweet butter, softened |

Preparation Steps | |

| 1. | In a medium bowl, combine the sauce ingredients (mayonnaise, Dijon mustard, ketchup, Heinz 57 steak sauce, A.1. Original Sauce, salt, and ground black pepper) and mix well. Set aside. |
| 2. | Cut the meatloaf into 8 thick slices. |
| 3. | Spread the softened butter on both sides of each slice of bread. |
| 4. | In a large frying pan, "grill" each slice of bread on both sides until golden brown. |
| 5. | Next, "grill" each slice of meatloaf on both sides in the same frying pan until nicely browned. You may need to do this in batches. |
| 6. | Top one side of a grilled slice of bread with some of the sauce. Place one slice of meatloaf on top of the sauce, followed by sliced tomato, onion, and shredded lettuce. Top with more sauce, then add another slice of grilled bread on top. Serve and enjoy. |
