12 eggs
4 celery stalks, diced very small
1 cup white vinegar
1 cup water
2 tablespoons sea salt
1 tablespoon granulated sugar
12 cup mayonnaise
12 cup Dijon mustard
1 tablespoon chopped capers
14 cup chopped green onion or leeks
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh tarragon
14 a pinch of Allepo peppers

Instructions

1. Begin by placing the eggs in a heavy pot, ensuring they are covered by an inch of lukewarm water, and heat over medium-high heat.
2. Once the water comes to a boil, add ¼ teaspoon of kosher salt and a teaspoon of white vinegar, then cover the pot and turn off the heat.
3. Set a timer for your desired yolk consistency - 10 minutes for hard-boiled eggs or 8 minutes for a softer yolk.
4. While the eggs are cooking, prepare an ice bath by combining water and ice in a medium bowl to cool the eggs quickly once they are done.
5. Gently crack the eggs by rolling them on a counter to facilitate easy peeling, then return them to water for at least 15 minutes.
6. Next, pickle the celery by combining vinegar, water, Kosher salt, and sugar in a jar, shaking until the salt and sugar dissolve.
7. Add diced celery to the jar, cover, and refrigerate for at least 30 minutes or up to one week for optimal flavor.
8. Prepare the egg salad by peeling the eggs, separating the yolks from the whites, then mashing the egg whites until coarsely mashed.
9. Combine the yolks with mayonnaise, Dijon mustard, capers, green onion, chives, tarragon, and a pinch of Allepo peppers to create a creamy mixture.
