4 | garlic cloves, peeled |
2 | chilies (green Thai bird’s eye chilies or 1 jalapeño) |
1 | bunch fresh cilantro, roughly chopped |
1 | small shallot, minced |
¼ | cup freshly squeezed lime juice |
½ | cup extra-virgin olive oil |
½ | teaspoon kosher salt |
½ | teaspoon granulated sugar |
Instructions

For preparing the steak and marinade
- Begin by making the marinade. In a mortar and pestle, grind the black peppercorns into a fine powder. Add the garlic cloves and crush them into a smooth paste. If a mortar and pestle is not available, you can use freshly ground black pepper and a microplane to grate the garlic. Combine soy sauce, oyster sauce, sugar, lime juice, and vegetable oil. Mix all the ingredients thoroughly to create a well-combined marinade.
- Next, place the steaks in a zip-top bag and add the prepared marinade. Ensure the steaks are evenly coated by moving them around in the bag. Seal the bag and refrigerate for a minimum of 3 hours or overnight for optimal flavor infusion.
- When ready to grill, remove the steaks from the refrigerator and allow them to come to room temperature for about an hour. This step ensures even cooking on the grill.

- To prepare the garlicky green sauce, combine garlic cloves, chilies, cilantro, lime juice, salt, sugar, and olive oil in a food processor. Blend until a smooth sauce is formed.
