For the steak marinade

1 ½ pounds pounds steak (Any cut of steaks will work; for this recipe, thin pieces of steaks are preferred. I usually use ribeye.)
½ teaspoon black peppercorns
garlic cloves, peeled
2 tablespoons soy sauce
1 ½ tablespoons oyster sauce
2 teaspoons granulated sugar
1 tablespoon freshly squeezed lime juice
2 tablespoons extra-virgin olive oil

For the garlicky green sauce

4 garlic cloves, peeled
2 chilies (green Thai bird’s eye chilies or 1 jalapeño)
1 bunch fresh cilantro, roughly chopped
1 small shallot, minced
¼ cup freshly squeezed lime juice
½ cup extra-virgin olive oil
½ teaspoon kosher salt
½ teaspoon granulated sugar

Instructions

  • For preparing the steak and marinade

    1. Begin by making the marinade. In a mortar and pestle, grind the black peppercorns into a fine powder. Add the garlic cloves and crush them into a smooth paste. If a mortar and pestle is not available, you can use freshly ground black pepper and a microplane to grate the garlic. Combine soy sauce, oyster sauce, sugar, lime juice, and vegetable oil. Mix all the ingredients thoroughly to create a well-combined marinade.
    2. Next, place the steaks in a zip-top bag and add the prepared marinade. Ensure the steaks are evenly coated by moving them around in the bag. Seal the bag and refrigerate for a minimum of 3 hours or overnight for optimal flavor infusion.
    3. When ready to grill, remove the steaks from the refrigerator and allow them to come to room temperature for about an hour. This step ensures even cooking on the grill.
  • For making the garlicky green sauce and grilling the steak

    1. To prepare the garlicky green sauce, combine garlic cloves, chilies, cilantro, lime juice, salt, sugar, and olive oil in a food processor. Blend until a smooth sauce is formed.
    2. For the steaks, grill them on high heat with the lid open to achieve distinct grill marks. Alternatively, a cast-iron grill pan can be used for stovetop cooking. Grill the steaks to your desired level of doneness, typically 4 to 6 minutes per side for medium-rare. Allow the steaks to rest for 10 minutes before slicing.
    3. Before serving, thinly slice the rested steaks against the grain for optimum tenderness. Arrange the slices on a serving platter and accompany them with the aromatic green sauce for a delightful dipping experience.
