Ingredients
1 | (1 pound) loaf egg bread, torn into chunks |
---|---|
10 | fresh thyme, stemmed and finely chopped |
3 | fresh rosemary, stemmed and finely chopped |
6 | tablespoons unsalted butter |
2 | diced onion |
2 | celery, diced |
2 | portobello mushrooms, finely chopped |
3 | vegetable broth |
¼ | cup unsalted butter, melted |
1 | teaspoon salt, or more to taste |
1 | teaspoon ground black pepper, or more to taste |
Instructions
1. | Carefully tear the egg bread into rustic 1-inch chunks. Place them in a bowl and let them rest until they achieve a desired staleness, typically 1 to 2 days. |
---|---|
2. | Preheat the oven to 350 degrees F (175 degrees C). |
3. | Finely chop the fresh thyme and rosemary leaves; set them aside. |
4. | In a large, sturdy saute pan, melt 6 tablespoons of unsalted butter over medium heat. Add the diced onion and saute until translucent and soft, for about 3 to 4 minutes. Introduce the celery, mushrooms, and the reserved thyme and rosemary leaves. Cook until the mixture begins to soften, usually taking 3 to 5 minutes. |
5. | Transfer the cooked vegetable medley to a spacious bowl. Add the bread chunks, vegetable broth, melted butter, salt, and pepper. Taste the mixture and adjust the seasonings as necessary. Press the stuffing into a suitable baking dish. Cover it first with a layer of buttered parchment paper, then aluminum foil. |
6. | Bake the stuffing in the preheated oven until it achieves a beautiful golden-brown hue, typically requiring 45 to 55 minutes. Remove the foil and parchment paper during the final 10 minutes of baking. |
