1 (1 pound) loaf egg bread, torn into chunks
10 fresh thyme, stemmed and finely chopped
3 fresh rosemary, stemmed and finely chopped
6 tablespoons unsalted butter
2 diced onion
2 celery, diced
2 portobello mushrooms, finely chopped
3 vegetable broth
ΒΌ cup unsalted butter, melted
1 teaspoon salt, or more to taste
1 teaspoon ground black pepper, or more to taste

Instructions

    1. Carefully tear the egg bread into rustic 1-inch chunks. Place them in a bowl and let them rest until they achieve a desired staleness, typically 1 to 2 days.
    2. Preheat the oven to 350 degrees F (175 degrees C).
    3. Finely chop the fresh thyme and rosemary leaves; set them aside.
    4. In a large, sturdy saute pan, melt 6 tablespoons of unsalted butter over medium heat. Add the diced onion and saute until translucent and soft, for about 3 to 4 minutes. Introduce the celery, mushrooms, and the reserved thyme and rosemary leaves. Cook until the mixture begins to soften, usually taking 3 to 5 minutes.
    5. Transfer the cooked vegetable medley to a spacious bowl. Add the bread chunks, vegetable broth, melted butter, salt, and pepper. Taste the mixture and adjust the seasonings as necessary. Press the stuffing into a suitable baking dish. Cover it first with a layer of buttered parchment paper, then aluminum foil.
    6. Bake the stuffing in the preheated oven until it achieves a beautiful golden-brown hue, typically requiring 45 to 55 minutes. Remove the foil and parchment paper during the final 10 minutes of baking.
