Elegant Peach and Ricotta Crepe Filling

1 | peach pie filling |
1 | tablespoon lemon juice |
Instructions
1. | Gently drain ricotta cheese by wrapping it in cheesecloth and letting it sit over a bowl for 12 to 24 hours. |

2. | In a spacious bowl, combine the drained ricotta, confectioners' sugar, cinnamon, vanilla extract, and nutmeg. Refrigerate promptly. |
3. | In a nonstick pot, spread peach pie filling and add lemon juice. Cook on medium-low, stirring with a heat-resistant rubber spatula until steam or bubbles form. Use the spatula to roll the filling towards the center of the pan, then spread it out again. Repeat until the filling resembles honey in consistency. |
4. | While the filling is still warm, transfer it to a container and let it cool for 20 to 30 minutes. |
5. | Retrieve the cream filling from the refrigerator. In a separate bowl, gradually combine the fruit mixture with the cream, adding one spoonful of each until it reaches the consistency of cake frosting. Chill until ready to serve. |
