2 tablespoons olive oil
1 lb yellow onion, halved and thinly sliced to measure 4 cups
salt to taste
6 figs, stemmed and halved
12 cup red wine
12 cup chicken broth
1 tablespoon balsamic vinegar
1 tablespoon chopped fresh rosemary or 1 teaspoon dried rosemary
fresh ground black pepper to taste
1 - 1 1/3 lb salmon fillet, skinned and cut into 4 portions
chopped parsley for garnish

    1. Heat olive oil in the bottom of a medium nonstick skillet.
    2. Add thinly sliced yellow onions and sprinkle with 1/2 teaspoon of salt.
    3. Cover and cook over medium-low heat, stirring occasionally, until onions are soft, approximately 10 minutes.
    4. Remove the cover and continue cooking, stirring often, until onions are golden brown, for about 15 to 20 minutes.
    5. Stir in halved figs, wine, broth, balsamic vinegar, and fresh rosemary.
    6. Increase the heat to high and simmer until the sauce thickens, approximately 5 minutes.
    7. Season with salt and pepper to taste and keep warm.
    8. Preheat the oven to 450 degrees Fahrenheit (230 degrees Celsius).
    9. Sprinkle the salmon fillets with salt and pepper to taste.
    10. Place the seasoned salmon on a lightly oiled heavy baking sheet.
    11. Roast in the oven for 7 to 10 minutes or until the fish flakes easily with a fork.
    12. Sprinkle the roasted salmon with chopped parsley before serving over the rich fig sauce.
