- Heat olive oil in the bottom of a medium nonstick skillet.
- Add thinly sliced yellow onions and sprinkle with 1/2 teaspoon of salt.
- Cover and cook over medium-low heat, stirring occasionally, until onions are soft, approximately 10 minutes.
- Remove the cover and continue cooking, stirring often, until onions are golden brown, for about 15 to 20 minutes.
- Stir in halved figs, wine, broth, balsamic vinegar, and fresh rosemary.
- Increase the heat to high and simmer until the sauce thickens, approximately 5 minutes.
- Season with salt and pepper to taste and keep warm.
- Preheat the oven to 450 degrees Fahrenheit (230 degrees Celsius).
- Sprinkle the salmon fillets with salt and pepper to taste.
- Place the seasoned salmon on a lightly oiled heavy baking sheet.
- Roast in the oven for 7 to 10 minutes or until the fish flakes easily with a fork.
- Sprinkle the roasted salmon with chopped parsley before serving over the rich fig sauce.
