100 grams Pistachios
50 grams Walnuts
50 grams Desiccated Coconut
250 grams Pitted Dates
500 grams Raw Cashews (soaked)
1 cup Coconut Milk
14 cup Coconut Yoghurt
14 cup Maple Syrup
400 grams Dragon Fruit (frozen)
2 tablespoons Maple Syrup
4 tablespoons Chia Seeds

Instructions

    1. Preparing the Base
    2. In a food processor, combine pistachios, walnuts, and desiccated coconut. Pulse until they form an even crumb. Add pitted dates and pulse until a sticky dough forms. Press the base mixture into a lined pan and place it in the freezer while you prepare the filling.
    3. Creating the Filling and Chia Jam Topping
    4. Thoroughly rinse the raw cashews and drain them. In a high-speed blender, combine the cashews, coconut milk, coconut yoghurt, and maple syrup. Blend until smooth, then pour the mixture onto the prepared base. Place the cheesecake in the freezer for a few hours to set.
    5. For the Dragon Fruit Jam, thaw the frozen dragon fruit with maple syrup in a saucepan over low heat. Mash the fruit with a spatula, then stir in chia seeds. Transfer the jam to a jar and refrigerate until thickened.
    6. Assembling and Serving
    7. Once the cheesecake has set, spread a generous layer of the Dragon Fruit Jam on top. Return the cheesecake to the freezer for a few hours or overnight. Before serving, allow the dessert to sit at room temperature for a few minutes to soften slightly for easier slicing.
