Instructions
1. | Preparing the Base |

2. | In a food processor, combine pistachios, walnuts, and desiccated coconut. Pulse until they form an even crumb. Add pitted dates and pulse until a sticky dough forms. Press the base mixture into a lined pan and place it in the freezer while you prepare the filling. |

4. | Thoroughly rinse the raw cashews and drain them. In a high-speed blender, combine the cashews, coconut milk, coconut yoghurt, and maple syrup. Blend until smooth, then pour the mixture onto the prepared base. Place the cheesecake in the freezer for a few hours to set. |
5. | For the Dragon Fruit Jam, thaw the frozen dragon fruit with maple syrup in a saucepan over low heat. Mash the fruit with a spatula, then stir in chia seeds. Transfer the jam to a jar and refrigerate until thickened. |
