Preparation

1. In a mixing bowl, combine the sugar, cornstarch, grated lemon peel, ground cinnamon, and ground nutmeg. Add the sliced and peeled tart apples along with the drained pineapple chunks; toss gently to coat the fruits. Transfer the mixture to a greased shallow 2-quart baking dish.
2. In a separate bowl, mix the quick-cooking oats, all-purpose flour, and packed brown sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the chopped macadamia nuts and sprinkle this crumble mixture evenly over the apple-pineapple mixture in the baking dish. Bake, uncovered, at 375°F (190°C) for 30 minutes. Then cover loosely with foil and bake for an additional 15 minutes or until the apples are tender and the topping is beautifully golden.
