Instructions
For preparing the dough | |

1. | Begin by preheating the oven to 350°F (175°C). In a large bowl, whisk together tapioca flour, coconut flour, baking powder, xanthan gum, and fine Himalayan salt. |
2. | In the bowl of an electric mixer fitted with the paddle attachment, cream together the butter, solid coconut oil, and coconut sugar until the mixture is very light and fluffy, approximately 2 minutes. Incorporate the egg and pure vanilla extract until well combined, then gradually add the flour mixture. |
For shaping and baking the cookies | |
1. | Divide the dough into two portions. Roll out one portion of the dough to a thickness of 1/4-inch between two sheets of parchment paper. Use cookie cutters to create desired shapes and carefully transfer them to parchment-lined baking sheets. Repeat this process with the remaining dough and any scraps. |
