For the cookie dough

1 ½ cups tapioca flour
1 ½ cups coconut flour
1 teaspoon baking powder
1 teaspoon xanthan gum
¼ teaspoon fine Himalayan salt
4 ounces (4 ounces) butter, at room temperature
4 ounces solid coconut oil
1 cup coconut sugar
1 large egg
2 teaspoons pure vanilla extract

Instructions

For preparing the dough

1. Begin by preheating the oven to 350°F (175°C). In a large bowl, whisk together tapioca flour, coconut flour, baking powder, xanthan gum, and fine Himalayan salt.
2. In the bowl of an electric mixer fitted with the paddle attachment, cream together the butter, solid coconut oil, and coconut sugar until the mixture is very light and fluffy, approximately 2 minutes. Incorporate the egg and pure vanilla extract until well combined, then gradually add the flour mixture.

For shaping and baking the cookies

1. Divide the dough into two portions. Roll out one portion of the dough to a thickness of 1/4-inch between two sheets of parchment paper. Use cookie cutters to create desired shapes and carefully transfer them to parchment-lined baking sheets. Repeat this process with the remaining dough and any scraps.
2. Bake the cookies until they are lightly golden around the edges, rotating the pans halfway through the baking process, for approximately 6 to 8 minutes. Allow the cookies to cool completely on a wire rack.
