2 | teaspoons baking powder |
½ | teaspoon baking soda |
½ | teaspoon ground cinnamon |
½ | teaspoon ground cloves |
4 | large eggs |
1 | cup granulated sugar |
½ | cup vegetable oil |
½ | cup clover honey |
1 | cup freshly brewed strong coffee, cooled to room temperature |
Instructions
For the cake batter | |

1. | Sift together the flour, baking powder, baking soda, cinnamon, and cloves into a medium bowl. Set aside. |
2. | In the bowl of an electric mixer, beat together the eggs, sugar, oil, and honey until smooth. |
3. | Add the flour mixture and coffee to the egg mixture by alternating them, so that half the flour and coffee gets incorporated into the egg mixture on medium-low speed before adding the second half of the flour and coffee. Continue beating for a couple more minutes to ensure the batter is smooth. |
4. | Pour the batter into a generously greased 9x13 inch rectangular pan. |
5. | Bake at 350 degrees for about 35-40 minutes, or until a toothpick inserted in the center comes out clean. |
6. | Allow to cool completely before cutting the cake into squares. I like to serve them with a dollop of whipped cream on top. |
