1 (8 ounce) package pitted dates, finely snipped
1 ⅓ cup sugar
1 ⅓ cup water
1 cup finely chopped nuts
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1 ¼ teaspoon salt
1 ¼ teaspoon ground cinnamon
1 cup shortening
1 cup packed brown sugar
1 egg
1 teaspoon vanilla

    1. In a small saucepan, combine dates, sugar, and water. Bring to a gentle boil.
    2. Cook and stir over low heat for 1 to 2 minutes until the mixture thickens.
    3. Remove from heat and stir in nuts and vanilla.
    4. Allow the filling to cool completely.
    5. In a separate bowl, combine flour, baking soda, salt, and cinnamon.
    6. Using a large mixing bowl, beat the shortening for 30 seconds.
    7. Add brown sugar and beat until fluffy.
    8. Incorporate the egg and vanilla, beating well.
    9. Gradually add the flour mixture, beating until well combined. Finish mixing by hand.
    10. Cover the dough and chill for about 30 minutes to make it easier to handle.
    11. On a sheet of waxed paper, roll out the dough into an 18x10 inch rectangle.
    12. Spread the filling evenly, leaving a 1/2-inch border.
    13. Roll up the dough jelly-roll style, starting from the long side.
    14. Pinch the edge to seal the roll.
    15. Cut the roll in half crosswise.
    16. Wrap the two rolls and chill for several hours or overnight. (Chilling in a drinking glass will prevent a flat side.)
    17. Once chilled, slice the rolls into 1/4-inch pieces.
    18. Place the slices on a lightly greased cookie sheet.
    19. Bake in a preheated 350°F (175°C) oven for 10-12 minutes or until golden brown.
    20. Allow the pinwheels to cool on the sheet for 1 minute, then transfer them to a wire rack to cool completely.
