6 peeled, sliced fresh peaches
1/4 cup packed brown sugar
3 tablespoons gluten-free all purpose baking flour (such as Pillsbury™)
1 teaspoon cinnamon
1 teaspoon lemon juice
1/2 teaspoon grated lemon zest
1 cup gluten-free all purpose baking flour (such as Pillsbury™)
1 cup white sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon nutmeg
1 beaten egg
1/2 cup melted coconut butter

Instructions

    1. Preheat the oven to 375 degrees F (190 degrees C) and generously grease a shallow 11x7-inch baking dish.
    2. Arrange the peeled and sliced fresh peaches in the prepared baking dish. In a small bowl, combine packed brown sugar, gluten-free all-purpose baking flour, cinnamon, lemon juice, and grated lemon zest; then evenly sprinkle this mixture over the peaches.
    3. For the topping, in a medium bowl, mix gluten-free all-purpose baking flour, white sugar, baking powder, salt, and nutmeg. Add the beaten egg and stir until the mixture resembles coarse crumbs. Sprinkle this topping over the peaches. Finally, drizzle the melted coconut butter evenly over the topping.
    4. Bake in the preheated oven until the peach juices are bubbling and the topping is beautifully golden brown, approximately 38 minutes.
