Instructions

    1. Begin by grinding hazelnuts with 1/4 cup of granulated sugar to a fine texture.
    2. In a separate bowl, combine all-purpose flour, cinnamon, and salt. Set aside for later use.
    3. In a mixing bowl, cream together room temperature butter, 1/3 cup granulated sugar, vanilla extract, and egg yolks until light and fluffy.
    4. Gradually stir in the dry ingredients mixture until well incorporated.
    5. Shape the dough into a rectangle, wrap it in plastic wrap, and refrigerate for at least 1 hour.
    6. Once chilled, roll out the dough on a lightly floured surface and cut out round cookies using a 2" cookie cutter.
    7. For half of the cookies, cut out a small shape from the center.
    8. Arrange the cookies on a parchment paper-lined baking sheet.
    9. Bake the cookies at 350 degrees Fahrenheit for 12-14 minutes until lightly golden. Allow them to cool on a wire rack.
    10. Gently heat the seedless preserves in a saucepan.
    11. Spread 1/2 teaspoon of preserves onto the whole cookies.
    12. Dust the cut-out top cookies with powdered sugar.
    13. Sandwich the dusted cookies on top of the preserve-covered cookies to create a beautiful presentation.
    14. Store the assembled cookies in tins to preserve their freshness for a longer period.
