Instructions

- Begin by grinding hazelnuts with 1/4 cup of granulated sugar to a fine texture.
- In a separate bowl, combine all-purpose flour, cinnamon, and salt. Set aside for later use.
- In a mixing bowl, cream together room temperature butter, 1/3 cup granulated sugar, vanilla extract, and egg yolks until light and fluffy.
- Gradually stir in the dry ingredients mixture until well incorporated.
- Shape the dough into a rectangle, wrap it in plastic wrap, and refrigerate for at least 1 hour.
- Once chilled, roll out the dough on a lightly floured surface and cut out round cookies using a 2" cookie cutter.
- For half of the cookies, cut out a small shape from the center.
- Arrange the cookies on a parchment paper-lined baking sheet.
- Bake the cookies at 350 degrees Fahrenheit for 12-14 minutes until lightly golden. Allow them to cool on a wire rack.
- Gently heat the seedless preserves in a saucepan.
- Spread 1/2 teaspoon of preserves onto the whole cookies.
- Dust the cut-out top cookies with powdered sugar.
- Sandwich the dusted cookies on top of the preserve-covered cookies to create a beautiful presentation.
- Store the assembled cookies in tins to preserve their freshness for a longer period.
