Instructions
1. | Begin by grinding hazelnuts with 1/4 cup of granulated sugar to a fine texture. |

2. | In a separate bowl, combine all-purpose flour, cinnamon, and salt. Set aside for later use. |
3. | In a mixing bowl, cream together room temperature butter, 1/3 cup granulated sugar, vanilla extract, and egg yolks until light and fluffy. |
4. | Gradually stir in the dry ingredients mixture until well incorporated. |
5. | Shape the dough into a rectangle, wrap it in plastic wrap, and refrigerate for at least 1 hour. |
6. | Once chilled, roll out the dough on a lightly floured surface and cut out round cookies using a 2" cookie cutter. |
7. | For half of the cookies, cut out a small shape from the center. |
8. | Arrange the cookies on a parchment paper-lined baking sheet. |
9. | Bake the cookies at 350 degrees Fahrenheit for 12-14 minutes until lightly golden. Allow them to cool on a wire rack. |
10. | Gently heat the seedless preserves in a saucepan. |
11. | Spread 1/2 teaspoon of preserves onto the whole cookies. |
12. | Dust the cut-out top cookies with powdered sugar. |
13. | Sandwich the dusted cookies on top of the preserve-covered cookies to create a beautiful presentation. |
