Ingredients

cup canned black olives, chopped
4 cloves garlic
1 tablespoon ground cumin
1 teaspoon chili powder
¼ teaspoon cayenne pepper
2 tablespoons light olive oil (or virgin)
3 ½ lbs leg of lamb, bone in

Instructions

1. Preheat the oven to 350°F (180°C) and lightly oil a shallow roasting pan.
2. In a blender or food processor with the metal blade, combine the chopped olives, garlic, ground cumin, chili powder, cayenne pepper, and olive oil.
3. Blend the mixture until it is almost pureed.
4. Spread the olive mixture all over the leg of lamb, place the roast in the pan, and roast for approximately 1 hour (about 20 minutes per pound) or until the internal temperature reaches 155°F (68°C).
5. Allow the lamb to rest for 10 minutes before carving.
