Ingredients

1 ½ rolled oats
½ teaspoon baking soda
¼ teaspoon kosher salt
3 tablespoons granulated sugar
3 tablespoons pure maple syrup
2 tablespoons canola oil
¼ cup golden raisins
1 teaspoon pure vanilla extract
almond milk

Instructions

1. Preheat the oven to 375F and lightly grease a cookie sheet.
2. In a blender or food processor (an immersion blender can be used), blend rolled oats, granulated sugar, baking soda, and kosher salt until the mixture resembles a coarse flour with some visible larger oatmeal bits. Transfer the mixture into a large mixing bowl and set it aside.
3. In a smaller bowl, combine canola oil, pure maple syrup, and pure vanilla extract.
4. Pour the wet ingredients into the oat mixture and mix well. Add the golden raisins and incorporate them into the dough.
5. Using a cookie scoop or a heaping tablespoon, place dough onto the prepared cookie sheet and gently flatten them into cookie shapes. Ensure they are placed at least 2 inches apart as they will spread while baking.
6. Bake for 7-10 minutes, or until the edges turn golden brown and the centers are still soft. Allow the cookies to cool on the pan for a minimum of 5 minutes before transferring them to a cooling rack.
