Indulge in these divine oatmeal cookies made with golden raisins, free from gluten and animal products.
1 1⁄2 | rolled oats |

1⁄2 | teaspoon baking soda |
1⁄4 | teaspoon kosher salt |
3 | tablespoons granulated sugar |
3 | tablespoons pure maple syrup |
2 | tablespoons canola oil |
1⁄4 | cup golden raisins |
1 | teaspoon pure vanilla extract |

| 1. | Preheat the oven to 375F and lightly grease a cookie sheet. |

| 2. | In a blender or food processor (an immersion blender can be used), blend rolled oats, granulated sugar, baking soda, and kosher salt until the mixture resembles a coarse flour with some visible larger oatmeal bits. Transfer the mixture into a large mixing bowl and set it aside. |
| 3. | In a smaller bowl, combine canola oil, pure maple syrup, and pure vanilla extract. |
| 4. | Pour the wet ingredients into the oat mixture and mix well. Add the golden raisins and incorporate them into the dough. |
| 5. | Using a cookie scoop or a heaping tablespoon, place dough onto the prepared cookie sheet and gently flatten them into cookie shapes. Ensure they are placed at least 2 inches apart as they will spread while baking. |
| 6. | Bake for 7-10 minutes, or until the edges turn golden brown and the centers are still soft. Allow the cookies to cool on the pan for a minimum of 5 minutes before transferring them to a cooling rack. |
